So I had the hugest craving for flan, I mean I at least have it once or twice, maybe 3 times a year, but having this allergy, really kills it for me… I haven’t had it in over a year… I wanted something with some likeness to it. Creamy, soft kinda melts in your mouth feeling. So I finally caved in out of desperation and gave it a try. I was so horribly afraid to use agar agar, I hadn’t had it much and I was afraid the first bite would result as something like jello. I was looking forward to the supposed Filipino way of steaming the way my mother would do, however, not the case with this flan. But Peta, thank you so much! My first try came out delicious, a bit on the soft side enough to be creamy even though I did tweak the recipe. Not quite like my mother’s but very delish. Maybe now I can make choco flan cake for my father’s birthday from scratch this year and eat it too! not to mention, a very big time saver, it gelled up pretty quick. Not bad for my first time using agar agar. I made it dairy free, not vegan, all the change needed however would just be some beet/vegan sugar. If you’d like to try my version let me know, I might just post it up.
